Caprese Salad
This is an Italian classic for a reason. It’s delicious and goes brilliantly well with pizza and a nice glass of white wine!
3-4 servings.
Ingredients:
225g Burrata or Mozzarella in water
1kg mixed heirloom tomatoes (or the best ripe tomatoes you can find)
Handful of fresh Basil leaves
Sea salt
Black Pepper
Method:
- Using a serrated knife, cut the tomatoes into slices and arrange on a serving platter or large plate.
- Cut the Burrata or Mozzarella into slices and put the cheese in and around the tomato slices.
- Scatter over the fresh Basil leaves.
- Season with salt and freshly ground black pepper.
- Allow the salad flavours to combine for 30 minutes before serving. Leftovers will keep in the fridge for 2-3 days.
